Delicious and Authentic Beef Enchiladas Recipe for Mexican Food Lovers

These delicious rolled tortillas filled with a variety of ingredients, from meat and cheese to beans and vegetables, are a staple in Mexican cuisine. They are not only tasty and filling but also easy to prepare, making them perfect for a family dinner or a party.

Enchiladas originated in Mexico, and their history dates back to the Aztecs. The word enchilada comes from the Spanish word enchilar, which means “to add chili pepper to.” The Aztecs used tortillas filled with fish, beans, and chili pepper as a staple food, and over time, the recipe evolved to include a variety of fillings.

Today, enchiladas are enjoyed all over the world, and many variations exist, depending on the region and the ingredients used. In Mexico, enchiladas are typically made with corn tortillas and filled with meat, cheese, or beans. They are then covered with a chili sauce and baked or fried.

Ingredients:

  • 450 grams ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 jalapeno pepper, seeded and chopped (optional)
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 425 milliliters tomato sauce
  • 120 grams diced green chilies
  • 8-10 flour tortillas
  • 100 grams shredded cheddar cheese
  • 15 grams chopped fresh cilantro (optional)
  • Sour cream and guacamole , for serving

Instructions:

  1. Preheat your oven to 190°C. Grease a large baking dish and set aside.
  2. In a large skillet, cook the ground beef over medium-high heat until browned, stirring occasionally. Drain off any excess fat.
  3. Add the onion, bell pepper, jalapeno (if using), and garlic to the skillet. Cook until the vegetables are tender, about 5 minutes.
  4. Stir in the cumin, chili powder, salt, and pepper. Add the tomato sauce and diced green chilies. Bring to a simmer and cook for 5 minutes.
  5. Warm the tortillas in the microwave for 30 seconds or in the oven for a few minutes, until they are pliable.
  6. Spoon some of the beef mixture onto each tortilla and sprinkle with shredded cheese. Roll up the tortillas and place seam-side down in the prepared baking dish.
  7. Spoon any remaining beef mixture over the top of the tortillas. Sprinkle with more cheese and cilantro (if using).
  8. Cover the dish with foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, until the cheese is melted and bubbly.
  9. Serve the enchiladas hot, with sour cream and guacamole on the side.
