Yield: 3.5 liters

Ingredients:

50 ml olive oil

2 chopped onions

6-7 chopped garlic cloves

5 kg cored and chopped tomatoes

1 small bunch chopped basil

salt, as needed

ground black pepper, as needed

Method:

Heat the oil in a wide shallow pot over medium low heat, add the onions and cook until they get a golden brown color. Add the garlic and cook, while stirring for about a minute.  Add the tomatoes, and cook while stirring occasionally for about 45 minutes (time may vary due to the tomatoes quality and moisture). Add the basil and simmer for 2-3 minutes. Season with salt and pepper. The sauce is ready to serve, or it may be chilled for later use.pexels-photo-428301.jpeg
