Mashed Taro (Kolokasi)

Ingredients:
1 kg Taro, peeled and cut in cubes
70 gr chopped onion
1 lt water
500 ml fresh cream
1 tbsp butter
Salt, as needed
Ground white pepper, as needed
Method: Heat the butter over medium heat in a sauce pot in order to melt it. Add the onions and sweat them, then add the taro. Cook the taro while stirring occasionally for about 5 minutes. Add the water and increase the heat until it boils. When the water boils, reduce the heat to a minimum and continue cooking until the taro melts. Strain the taro and discard the excess water. Add the taro in the sauce pot again and add the fresh cream. Continue cooking over medium heat for about 5 minutes. Mash the taro in a blender or a food processor and strain again in order to remove any small bits that didn’t melt . Add salt and pepper to taste.
