Beef Bolognese
Yield: 1 kg Bolognese
Ingredients:
50 gr olive oil
200 gr Classic mirepoix
750 lean ground beef
240 ml white wine
50 gr tomato paste
salt, as needed
ground black pepper, as needed
500 ml Chicken stock
Heat the olive oil over medium-low heat in a medium stockpot. Add the mirepoix and cook, stirring frequently, until the vegetables are softened. Increase the heat to medium-high and add the ground beef. Cook, stirring occasionally until the meat is brown, this should take around 10-12 minutes. Drain the excess fat if needed. Stir in the tomato paste and cook for another minute, stir in the white wine and reduce the mixture until it’s nearly dry. Season with salt and pepper. Add the chicken stock, reduce the heat to low and simmer for another 1 and a half hour until the mixture has reduced and the flavors have concentrated. Taste the sauce and add salt and/or pepper if needed. The sauce is ready to use. Enjoy!
