Ingredients:

100 ml white balsamic vinegar

300 ml extra virgin olive oil

1 tsp dijon mustard

1 tsp honey

salt

pepper

Method:

In a bowl, add the vinegar, mustard and honey, whisk until everything is combined, add salt and pepper until the mixture reaches your preferred taste, start adding olive oil slowly slowly while whisking, as you add the olive oil the dressing will start emulsifying and become a thick, smooth mixture with a rich taste. As soon as you add all the olive oil,  taste the dressing and correct the flavor using salt.
