Beef Burgers, our own recipe, inspired by the Thomas Keller one.

Ingredients

330 gr Chuck

330 gr Brisket

450gr Sirloin

10g paprika

5g salt

30g Dijon mustard

30g barbeque sauce

5g thyme

5g oregano

2g ground black pepper

5g garlic powder

Instructions

Set up a grinder with the 3/8-inch die. Grind the meat, alternating pieces of sirloin, brisket and chuck. Add all the rest ingredients and mix well but smoothly using your hands.

Divide the burger mixture into 6 portions. Form 6 well shaped and same sized burgers. Do not squeeze, mash, or overwork the meat.

Tips

For a perfect taste, rub your burgers with your choice of a dry rub just before you cook them

Do not overcook, Beef burgers are best eaten when medium cooked!

Do not use tongs or tweezers, a spatula will do the job without squeezing the liquid out of the burgers
