Yakitori marinade
Yield: 500 ml
Ingredients:
400 ml Sake
200 ml Mirin
400 ml Soy sauce
50 gr miso paste
100 gr sugar
30 gr chopped ginger
In a sauce pot, add all the ingredients and bring to a boil. Lower the heat and simmer for 30 minutes until the marinade reduces to 500 ml. Turn off the heat and cool the marinade, it’s now ready to use or it can be stored in a fridge for up to 3 weeks.
