Tips on cooking a steak
In my professional life as a cook, i can recall numerous times of people disrespecting prime cuts while cooking, i saw them pinching steaks and probing them, i saw them taking them out of the fridge and put them straight on the grill, well, today, i write this article hoping that all that nonsense stops!
Lets put things in order, by writing down the right steps of steak cooking, starting from the pre-cut steak, to the amazing final dish.
1. Marinade Well. Once you take your steak out of the fridge, dry rub it gently, massage all the flavors of your preferred dry rub on every little place of your steak, so the flavor will be spread evenly
2. Let it Sit On the Bench. The core temperature of the steak when you take it of the fridge will be somewhere around 4 Celsius, in order to cook it properly, you have to let it sit on your bench for around 10 minutes so the core temperature starts rising even before you start grill it.
3. Place it on a hot Grill or a pan, A HOT ONE. The reason we sear our steaks, is to close all the little pores that it has, making the juices stay in, so, a hot pan or grill, will close the pores immediately and evenly, keeping all the amazing juices in.
4. Do Not Use Tongs, I Repeat, Do Not Use Tongs! Tongs will squeeze the moisture out of your steak, so the best approach is to use a spatula.
5. Let it Rest. When the steak reaches your preferred doneness, let it rest on your board for 5-7 minutes, if you do that, the food will take its time to relax, finish all its chemical reactions, and the final product will be one to remember.
