Vierge Sauce
Vierge is a cold sauce, based on olive oil and raw Mediterannean veggies. Its a perfect sauce for grilled or sautè fish.
Ingredients:
1 tomato, seeded and chopped
2 tbs sliced black Kalamata olives
1 shallot, chopped
1 tbs pickled capers
1 tbs fresh parsley, chopped
1 tbs fresh coriander, chopped
500 ml Extra Virgin Olive Oil (preferably Cretan)
Mix all the Ingredients, season with sea salt.
