Ingredients:

1 salmon side (approx 2 kg)

500 ml orange juice

50 ml grapefruit juice

20 ml lime juice

50 ml tangerine juice

50 gr honey

30 gr Dijon

1 Chilly, sliced

Salt, as needed

Pepper, as needed

Method:

Mix the juices with the honey, chilly,dijon, salt and pepper. Add the salmon in a container that can hold both the juice mixture and the salmon, add the juice mixture and refrigerate for 1 hour. Cover the bottom of a baking pan (big enough to hold the salmon) with parchment paper. Remove the salmon from the juices and add it to the pan.Bake in a preheated oven at 200 degrees Celsius for 20 minutes. Pour the juices in a sauce pot and cook over medium heat until they reduce and thicken enough to become a sauce, taste the sauce and add salt and/or pepper if needed. Pour the sauce over the salmon side and enjoy!

Tip: Cooking times may vary due to your preferable cooking temperature of the salmon. Add more honey or chilly if you need either a sweeter or spicier result.
